Recipe: Fried Shrimp with Brown Sugar Pineapple Sauce

Salty and sweet flavors come together nicely here. Whether to use the pineapple sauce as a dip or pour it over the fried shrimp and toss them until they’re coated with it is up to you. I’ve served these both ways to the great satisfaction of self and those served.
What You’ll Need:

Seasoned Shrimp

  • 2 dozen extra-large shrimp, peeled and deveined
  • 1 tsp pink Himalayan sea salt
  • 1 tsp white pepper
  • 1 tbsp garlic paste
  • 1 tsp lime juice

Seasoned Flour

  • 2 cups all-purpose flour
  • 2 tbsp salt
  • 2 tsp cumin
  • 1 tsp white pepper

Brown Sugar Pineapple Sauce

  • 1 ½ cups diced pineapple
  • ½ tsp fish sauce
  • 3 firmly packed tbsp brown sugar
  • 2 tbsp honey
  • 1 ½ tsp Memmi noodle soup base
  • 1 tbsp unsalted butter

What To Do:

  1. Into a frying pan, pour enough vegetable or corn oil to cover the pan bottom to a depth of about 1 inch. Preheat over medium-high heat.
  2. Combine peeled, deveined shrimp in a large mixing bowl with pink sea salt, 1 tsp white pepper, garlic paste, and lime juice. Mix until evenly coated.
  3. In a separate bowl, combine flour with salt, cumin, and 1 tsp white pepper. Coat all sides of seasoned shrimp with flour blend. Place these 4 or 5 at a time into hot oil and fry each batch for 2 to 2 ½ minutes.
  4. In a small saucepan over medium heat, combine diced pineapple, brown sugar, fish sauce, Memmi, honey, and butter. Bring to a light boil, then reduce heat to low and simmer.
  5. Serve fried shrimp immediately with brown sugar pineapple sauce, either by pouring sauce over shrimp and tossing until coated, or serving it alongside shrimp as a dip.
