Recipe: Tamarind-Masala Pork Rib Tips

With less than five ingredients, this marinated rib tip recipe is easy to prepare and big on flavors that are simple, yet make a fun departure from the ordinary.  The sweetness of tamarind plays nicely with the subtle heat  of garam masala, making for a taste that is layered and well-seasoned.


  • 24 oz. tamarind juice
  • 2 tsp salt
  • 1 tbsp garam masala
  • 4 lbs. pork spare rib tips


  1. In a one-gallon storage bag, combine tamarind juice, salt, and garam masala.
  2. Add spare ribs to bag, seal, and refrigerate.  Marinate for 3-4 hours.
  3. Discard marinade and cook rib tips uncovered in oven on 275 degrees for 60-75 minutes, or until meat achieves internal temperature of 165-170 degrees Fahrenheit.
