A Refreshing Cocktail/Mocktail Round-Up to Honor Summer’s First Rays

Today being the first day of summer, here are seven cold beverages perfect for sipping poolside or between backyard barbecue courses this season.


Mango Sunrise

Pour a glassful of appreciation for Old Sol with this tequila cocktail featuring Sparkling ICE.

Ingredients:

  • 3 oz. Mango Lemonade Sparkling ICE
  • 1.5 oz. Tequila
  • Splash of Grenadine syrup
  • Lemon slices and mint for garnish (optional)

Directions:

  1. Using a tall Collins glass, pour tequila, then Mango Lemonade Sparkling ICE over ice. Stir gently to mix.
  2. Top with a splash of Grenadine syrup.
  3. Garnish with lime slices and mint sprigs.

Green Tea Sake-Tini

A lower alcohol alternative to distilled spirits, sake is an excellent base for flavored cocktails. Its delicate flavor pairs well with flowery green tea and pink grapefruit juice.

Green Tea Sake-Tini

Ingredients:

  • 12 ounces spring water
  • 4 rounded teaspoons (or 4 bags) Fleur de Geisha tea*
  • 2.5 ounces Sake
  • 2.5 ounces pink grapefruit juice
  • 3 1/2 tablespoons cane sugar
  • 1.5 ounces (or 3 tablespoons) Triple Sec
  • Ice
  • Pinch ground ginger

Directions:

  1. In a small pot, bring the spring water to a simmer over a low flame (Do not let it boil.). Add the Fleur de Geisha tea leaves and infuse for 3 minutes. Filter out the leaves by pouring liquid through a mesh strainer or remove tea bags, if using. Let the tea cool, and then place in the refrigerator to chill for 30 minutes.
  2. When the tea is chilled, place into a cocktail shaker along with the Sake, pink grapefruit juice and cane sugar. Shake.
  3. Add Triple Sec and a few ice cubes. Shake vigorously until the outside of the cocktail shaker appears wet. Pour into glasses and garnish with a pinch of ground ginger, serve immediately. Yields 5 servings.

*Inspired by the Japanese Hanami tradition of cherry blossom viewing, Fleur de Geisha is a refined green tea, delicately flavored with cherry blossom.

Lemonade Sparkling ICE along with fresh limes and mint bring the refreshment to this attractive white rum cocktail.

Ingredients:

  • 3 oz. Lemonade Sparkling ICE
  • 1 oz. white rum
  • Mint leaves
  • Lime

Directions:

  1. Muddle mint leaves with rum.
  2. Strain and pour over ice.
  3. Top with Lemonade Sparkling ICE.
  4. Garnish with a fresh lime and mint leaves.

Pomegranate juice, VOGA Italia Premium Sparkling wine and vodka work together in this mix, just as nature intended.

Ingredients:

  • 4 ounces of VOGA Italia Premium Sparkling
  • 1 ounce of vanilla flavored vodka
  • A splash of pomegranate juice
  • Lime for garnish

Directions:

  1. Add vodka and pomegranate juice to a cocktail shaker with ice and shake gently.
  2. Strain into a chilled martini glass and top off with VOGA Italia Premium Sparkling. Garnish with a lime.

Woodbridge by Robert Mondavi Moscato Mint Julep

The sweetness of Moscato and the eye-opening coolness of mint are well-matched in this latest spin on a classic.

Ingredients:

  • 3 oz. Woodbridge by Robert Mondavi Moscato
  • 3 tsp seltzer water
  • 3 sprigs fresh mint
  • Extra large ice cubes

Directions:

  1. To make mint ice cubes, tear up about 8 mint leaves and freeze with water the night before.
  2. Muddle six mint leaves, powdered sugar and seltzer water in a glass or cocktail shaker.
  3. Add Woodbridge by Robert Mondavi Moscato and shake or stir lightly to mix.
  4. Add ice cubes to your serving glass, pour drink over the ice and garnish with the remaining mint.

*Entertaining Tip: to make the mint ice cubes, chop several mint leaves and freeze them with water in ice cube trays the night before serving.


Carrington Farms Minty Iced Green/Lemon Tea (Serves 8)

For those seeking a healthy, alcohol-free refresher to enjoy during the dog days, Carrington Farms has got you covered.

  • 8 green tea bags
  • Sprigs of mint, for garnish

Directions:

  1. Add the tea bags to a 2-quart pitcher and fill it about 1/3 of the way with hot water.
  2. Steep for five minutes, then remove tea bags. Fill pitcher rest of the way with colder water. Serve over lots of ice and garnish with fresh mint.

Fruit-TEA Fresh Mocktail (Serves 5)

Fruit juices and fresh mint combine with rich, fruity Thé des Concubines – a refined, delicate green and black tea blend from China – for a sophisticated non-alcoholic beverage.

  • 8 ounces spring water
  • 3 rounded teaspoons of Thé des Concubines
  • 8 ounces strawberry juice*
  • 4 ounces pink grapefruit juice
  • 7 leaves fresh mint, sliced thinly
  • A few dashes grenadine syrup
  • 4 ice cubes

Directions:

  1. In a small pot, bring the spring water to a simmer over a low flame (Do not let it boil.).
  2. Add the Thé des Concubines tea leaves and infuse for 5 minutes. Filter out the leaves by pouring liquid through a mesh strainer. Let the tea cool, and then place in the refrigerator to chill for 30 minutes.
  3. When the tea is chilled, place into a cocktail shaker along with the strawberry juice, pink grapefruit juice and mint. Shake. Add a few dashes of grenadine syrup and the ice cubes. Shake vigorously until the outside of the cocktail shaker appears wet. Pour into glasses and garnish with a leaf of fresh mint, serve immediately. Yields 5 servings.

*Strawberry juice is available from Alain Milliat or you can prepare your own by pureeing fresh strawberries, water, and agave syrup to taste in a blender.
