4 Delicious Indian Egg Recipes You’ll Want to Try Tonight

You can eat eggs in many forms, such as boiled, fried, etc. These egg recipes are super easy to make, but sometimes you might feel bored with them. Instead of making the usual, why not try some Indian egg recipes that are not difficult to cook and are also delicious? Eggs are a great option for breakfast and dinner as well. They are not only cheap, but also healthy and helpful for hair care and skin care. They are also a powerful source of protein and are full of vitamins like A, B12, E and D, as well as minerals like calcium, iron and zinc. Here are four exciting Indian egg recipes that you can serve with Indian flatbreads or steamed rice.


Indian Egg Curry Recipe

You will need:

  • 4 hard-boiled eggs
  • 1/2 tomato, puréed
  • 1 onion
  • 3-4 garlic flakes
  • 1/2-inch ginger piece
  • 1-2 green chilies
  • Salt to taste
  • 2 Tbsp of chopped coriander leaves
  • Red chili powder to taste
  • 1/2 tsp of coriander powder
  • ¾ tsp of turmeric powder
  • ¾ tsp of garam masala
  • 1 cup of green peas
  • 2-3 Tbsp of vegetable oil/ghee

Process:

  1. Remove eggshells and leave aside.
  2. In a chopper or mixer, make a paste of garlic, onion, green chilies and ginger.
  3. Heat the oil in a wok or kadhi and add the onion and garlic paste. Fry till golden brown.
  4. After that, add all the spices excluding garam masala and fry for one minute.
  5. Add the tomato puree and fry until it begins leaving oil. Add one cup of water and cook till it reduces.
  6. Add the green peas and boiled eggs. Add one cup of water and bring to a boil. Simmer over low heat for ten minutes.
  7. Finally, garnish egg curry with coriander leaves and garam masala and serve hot with roti, paratha or rice.

Egg Bhurji

You will need:

  • 4 eggs
  • ½ cup of crumbled paneer
  • 2 large tomatoes, finely chopped
  • 2 large onions finely chopped
  • 1 carrot – finely grated
  • 1 ½ tsp of cumin seeds
  • 4 green chilies, slit lengthways
  • 1 ½ tsp of coriander powder
  • ½ tsp of turmeric powder
  • ½ tsp of red chili powder
  • Salt to taste
  • ½ tsp of Chaat masala
  • 1 tsp of garam masala
  • 1 Tbsp of coriander leaves
  • 1 Tbsp of clarified butter
  • A pinch of hing
  • 1 tsp of cooking oil

Process:

  1. In a preheated skillet, heat oil and clarified butter on medium-high heat.
  2. Add cumin seeds to that oil and let them simmer.
  3. To the oil add onions and green chilies, and then sauté until the onions turn pink.
  4. Add 1 teaspoon of coriander leaves and continue to sauté until the onions turn deep brown.
  5. Add tomatoes and cook until they become soft.
  6. Add salt, red chili powder, and coriander powder, and sauté for two minutes more.
  7. Crack in the eggs and cook until they start to scramble.
  8. Mix in crumbled paneer, the remaining coriander leaves, and carrots, and cook for three minutes more.
  9. Sprinkle garam masala and chaat masala and cook for one minute more.
  10. Season to taste and serve hot.

Eggs Pulao

You will need:

  • 2 cups of basmati rice, washed and soaked for 20 minutes
  • 4 cups of boiling hot water
  • 10 beans, sliced diagonally
  • 4 eggs, hard-boiled, peeled
  • 1 carrot, peeled, thinly sliced
  • 3 cardamom pods
  • ¼ cup of peas
  • 1 bay leaf
  • 1 1-inch piece of cinnamon stick
  • 3 cloves
  • 2 tsp of ginger garlic paste
  • 2 onion, large, finely sliced
  • 5 green chilies, slit lengthways
  • Salt to taste
  • 1 tsp of turmeric powder

Process:

  1. Heat oil in one large vessel on medium – high flame. Next, add all the spices and leave them to simmer.
  2. Add onion, ginger garlic paste, and green chilies and now sauté until the raw flavor of ginger garlic paste disappears and onions become golden brown.
  3. Add the veggies and sauté for three minutes. Add rice and give a quick mix.
  4. After that, add water, salt, and turmeric powder and leave the mixture to come to a boil.
  5. Reduce the flame, cover and cook until the rice is partially cooked.
  6. Halve these eggs and add to that mixture.
  7. Cover and continue cooking until the water is evaporated completely and rice is cooked completely.
  8. Serve hot alongside raita.

Indian Egg Biryani Recipe

You will need:

  • ½  cup of ghee/oil
  • 8 large, peeled hard-boiled eggs
  • 1 finely chopped large onion
  • 2 flakes of garlic (crushed)
  • 1-inch cinnamon stick
  • 2 bay leaves
  • 1 brown cardamom
  • ½ tsp of turmeric powder
  • 4 green cardamom pods
  • ½ tsp of chili powder
  • 2 1/2 cups of warm water
  • 2 cups of Basmati rice
  • 1 Tbsp of chopped coriander leaves
  • 3-4 thickly sliced tomatoes to garnish
  • 1 tsp of garam masala powder
  • Salt to taste

Process:

  1. In a saucepan, heat the oil/ghee and fry garlic and onions together with the cinnamon, cardamom and bay leaves until golden.
  2. Prick the eggs carefully with a fork and add to the pan.
  3. Stir in chili powder, turmeric and fry for around five minutes.
  4. Add pre-soaked rice and stir carefully for 2 minutes.
  5. Pour in water, and salt to taste. Cook over moderate heat until the water is absorbed and rice is tender.
  6. Sprinkle with garam masala powder.
  7. Garnish egg biryani with tomato slices and chopped coriander and lastly, serve hot.
